- 2 cup gram flour (besan)
- 1 cup Kiran Banaspati
- 1 ½ cup sugar
- 1 ½ cup water
- 1 cup milk
- 4 green cardamom, split
- Almonds, for garnish
- Pistachio, for garnish
Method
In a saucepan combine the cover of green cardamom, water and sugar. Cook over high heat until sugar dissolves. Set aside.
Heat Kiran Banaspati in a pot. Put the seeds of green cardamom in Kiran Banaspati. Add gram flour and cook on medium low flame, stirring frequently, until gram flour turns light brown and becomes aromatic. If during this stage gram flour absorbs Kiran Banaspati, do not worry. Reduce heat to low.
Add milk slowly, while stirring frequently. When milk is mixed in gram flour, add the sugar syrup, slowly and stirring frequently so that lumps do not form.
When all sugar surup is added, increase heat and cook halwa over medium high heat. Stir frequently. When water is all absorbed and halwa is cooked, it will start to come together. At one point, Kiran banaspati will appear at the sides. As soon as Kiran baaspati appears on the side, remove from heat and turn out into a shallow dish.
Garnish with almonds and pistachios. Cut into diamonds. Let halwa come to room temperature and serve.
